Firehouse Subs Veggie Sub Recipe

Ingredients:

  • 1 sub roll (8-inch, white or wheat)
  • 1/2 cup green bell peppers, sliced
  • 1/2 cup onions, sliced
  • 1/2 cup mushrooms, sliced
  • 1–2 tablespoons olive oil (or your preferred cooking oil)
  • Salt and pepper to taste
  • Provolone cheese slices (2 slices)
  • Lettuce, shredded
  • Tomato slices
  • Optional: pickles, onions, or other fresh veggies
  • Optional: vinegar or Italian dressing for drizzling

Instructions:

  1. Prepare the Vegetables:
    Wash and slice the green bell peppers, onions, and mushrooms evenly.
  2. Sauté the Vegetables:
    Heat olive oil in a pan over medium heat.
    Add the bell peppers, onions, and mushrooms.
    Cook, stirring occasionally, until the vegetables are soft and caramelized (about 8–10 minutes).
    Season with salt and pepper to taste.
  3. Prepare the Sub Roll:
    Slice the sub roll lengthwise without cutting all the way through.
    Optional: Toast the inside lightly for some crunch.
  4. Assemble the Sub:
    Place 2 slices of provolone cheese on the bottom half of the roll.
    Add the warm sautéed vegetables on top of the cheese.
    Layer with fresh shredded lettuce and tomato slices.
    Add any optional toppings like pickles or raw onions.
    Drizzle a little vinegar or Italian dressing if desired.
  5. Serve:
    Close the sub, cut it in half if you like, and serve immediately while the veggies are warm and delicious.

Tips:
