Firehouse Subs Spicy Cajun Chicken Recipe

Ingredients (for 1 large sub)

  • 1 sub roll (white or wheat)
  • 1 grilled chicken breast, seasoned with Cajun spices
  • Sliced jalapeños (to taste)
  • 2 slices Pepper Jack cheese
  • Lettuce (shredded or leaves)
  • Sliced onions
  • 1 tablespoon deli mustard
  • 1 tablespoon housemade Cajun mayo (or regular mayo mixed with a pinch of Cajun seasoning)

Instructions

  1. Prepare the Chicken
    • Season the chicken breast with Cajun seasoning (paprika, cayenne, garlic powder, onion powder, salt, pepper).
    • Grill or cook the chicken until fully cooked and juicy.
  2. Toast the Roll
    • Slice the sub roll open but not all the way through.
    • Toast lightly in an oven or on a skillet.
  3. Melt the Cheese
    • Place the cooked chicken on a pan or microwave-safe plate, top with Pepper Jack cheese.
    • Heat until cheese melts.
  4. Assemble the Sub
    • Spread deli mustard and Cajun mayo on the inside of the toasted roll.
    • Add the chicken with melted cheese.
    • Top with jalapeños, lettuce, and onions.
  5. Serve
    • Close the sandwich, cut in half, and enjoy hot!
