Ingredients

For the Mac & Cheese:

  • 2 cups elbow macaroni (uncooked)
  • 2 cups shredded cheese blend, such as:

  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 2 cups milk (whole or 2%)

  • 1/2 tsp Dijon mustard (optional)
  • Salt and pepper, to taste

  • 1/2 cup panko breadcrumbs
  • 1 tbsp melted butter

Instructions

1. Prepare the Pasta

  • Cook macaroni in salted boiling water until al dente.
  • Drain and set aside.

2. Make the Roux

  • In a medium saucepan, melt butter over medium heat.
  • Stir in flour and cook for 1–2 minutes, until bubbly (not browned).

3. Make the Cheese Sauce

  • Slowly whisk in milk, stirring constantly.
  • Bring to a gentle simmer; cook for 2–3 minutes until slightly thickened.

4. Add Flavor

  • Stir in cream cheese (if using), onion powder, garlic powder, Dijon mustard, salt, and pepper.
  • Whisk until smooth.

5. Add Cheese

  • Lower the heat and gradually add the shredded cheeses, one handful at a time.
  • Whisk until fully melted and sauce is smooth.

6. Combine Pasta and Sauce

  • Add the cooked pasta into the cheese sauce.
  • Stir until evenly coated.
