Firehouse Chili Recipe

Ingredients:

  • 1 lb ground beef (80/20 preferred for flavor)
  • 1/2 lb smoked sausage, diced (optional but adds depth)
  • 1 small onion, diced
  • 1/2 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes, with juices
  • 1 can (8 oz) tomato sauce
  • 2 tbsp tomato paste
  • 1 cup beef broth
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • 1/2 tsp oregano
  • Salt & pepper, to taste
  • Optional toppings: shredded cheese, sour cream, diced onions, jalapeños

Instructions:

  1. Cook the Meat:
    In a large pot or Dutch oven, cook ground beef over medium heat until browned. Drain excess fat if needed.
  2. Add Sausage & Veggies:
    Add diced smoked sausage (if using), onions, bell peppers, and garlic. Cook for 5–7 minutes, stirring occasionally, until veggies soften.
  3. Add Tomato Base:
    Stir in diced tomatoes, tomato sauce, tomato paste, and beef broth. Mix well.
  4. Season It:
    Add chili powder, cumin, paprika, oregano, salt, and pepper. Bring to a simmer.
  5. Add Beans:
    Stir in kidney and pinto beans. Reduce heat to low and let simmer for 30–45 minutes, stirring occasionally. The longer it simmers, the better the flavor.
  6. Taste & Adjust:
    Adjust seasoning as needed. Add a little hot sauce or cayenne pepper if you want some heat.
  7. Serve:
    Ladle into bowls and top with cheese, sour cream, or onions if desired. Serve with cornbread or crackers.
